Very appreciated on gnocchi, but also other kinds of hand-made pasta, the pesto sauce gives every dish an unmistakable scent of fresh basil that opens your heart, and it immediately feels like summer, sea, sun, open air.
The secret for the preparation of a good pesto is in the very freshness of the basil leaves, which need to be just quickly washed before being beaten: in Italian, pesto means pestled, trampled.
